I Have Remembered How to Cook

Recently, whilst visiting some friends, we were give a bag of home-grown yellow squash.  Soon thereafter, I found myself at a grocery store...so, I bought some things to go with the squash.  Today, I actually got around to cooking it!




Lovely yellow squash!



More fresh ingredients.




Olive oil and butter heating in the skillet.




The onion was allowed to caramelize in the hot oil/butter mixture.




Squash was added, heat turned down, and the skillet covered 
to let the squash gently steam.




While the squash was steaming, the tomatoes were halved and
 the basil chiffonade prepared.




Tomatoes and basil were added to the skillet.




The mixture was stirred...




...the heat was turned off, and the lid returned.  The mixture was left long
 enough for the tomatoes to heat.  Coarse sea salt and 
freshly-ground pepper were added to taste.




After dishing up the veggies, some grated Italian cheese was added.   
I think I prefer this dish without the cheese.
